Being full of a cold I wanted soup. I want comfort food in a mug. I enjoyed streaky bacon for breakfast incurring a few syns so decided my lunchtime soup needed to be Syn Free. I wanted goodness, vitamins, colour, flavour and this is all of those!
A rainbow of colours roasted in the oven and turned into a delicious healthy soup.
The only other added ingredients are store cupboard staples.

To make Roasted Tomato and Speed Vegetable Soup you will need
A chopping board
Deep Roasting tin
Large saucepan with lid
400gms tomatoes diced
1 yellow pepper diced
2 carrots diced
1 large red onion diced
2 garlic cloves diced
1 bunch of fresh Basil leaves (finely chop half of them for garnish)
2 tbsp good balsamic vinegar
Fresh ground salt and pepper
1 stock pot – I use chicken but vegetable will do made into 600ml stock with boiling water
2 tbsp tomato purée
2 tsp sweetener (optional)
Pre heat oven to Gas 6, electric 200, fan 180
Combine all the vegetables and half of the basil and place in your roasting tin.
Drizzle with the balsamic and season with salt and pepper.
Spray with frylight and place in the oven for 30 mins.
Place your large saucepan over a medium heat add the roasted vegetables and the stock. Add the tomato purée and stir. Bring to the boil, then reduce heat and simmer covered loosely for apx 20 mins until all the vegetables have cooked.
If you like a smooth soup blitz with a hand blender or just part blitz for a chunkier soup. Add the remainder of the basil leaves that you chopped, stir, cook for a further minute then serve.
