This recipe is taking the basic Slimming World favourite Curry Loaf a step further. I really fancied a Syn Free Meat version. With a little meat involved I feel like I could just take a slice of this, pop it in a frying pan and enjoy it for any meal of the day – not just for a snack.

To make this recipe you will need a loaf tin. I use a silicone one as the tin ones tend to go rusty – but the downside with the silicone ‘tins’ is you can’t get the oil off when it’s baked on. No matter how much I have tried it won’t budge. Hence the scruffy looking ‘tin’! If you are using a metal loaf tin consider lining it with baking paper otherwise it may stick on removal.
1 medium sized pan with lid
1 tin Syn Free curry lentils – I used a tin of Heinz Dhal Curry Lentils
1 pk Bachelors Super Rice Mild Curry
250gms less than 5% minced beef
Optional 1 tbsp curry powder
Optional large pinch of chopped coriander
1 Beef oxo
4 large eggs
Preheat oven to Gas 6, Electric 200, Fan 180
In a medium sized pan sprayed with frylight brown the mince. Add 325ml of boiling water to the pan and then add the rice. Crumble oxo into pan and stir. Bring back to the boil then cover pan loosely and reduce heat to a gentle simmer and simmer for 10 mins. Don’t worry if the rice isn’t quite cooked as it will continue cooking in the oven. Make sure all the water is absorbed.
Remove from the heat and stir in the tin of curry lentils – this will cool the mixture slightly. Add curry powder and coriander if desired and stir. Add the eggs and thoroughly stir until the eggs are distributed evenly .
Transfer the contents of your pan into the loaf ‘tin’ then pop into the oven until golden brown and there is no juices bubbling in the centre – apx 40mins
Let cool for a few mins then turn out to serve
Makes apx 10 Slices
Serve as a snack or part of a meal.
