Lo-Dough Cheese Scones

Serving suggestion: tsp butter and piccalilli

Following on from the success of my Lo-Dough Cream Tea blog post I just had to make a savoury version that would perfectly complement the fruit scones in the Cream Tea blog and be a perfect partner for serving Afternoon Tea the healthy way!

There’s nothing better than a freshly baked Cheese Scone warm and dripping with a little butter – oh yes, go on, put a tsp of butter on!

Ken insisted on having a little Piccalilli in his, hence the serving suggestion above!

This recipe is not complex, not difficult, not hard to remember and only contains very basic ingredients – in fact the easiest part is the cooking !

The most important ingredient – Lo-Dough!

Lo-Dough – the revolutionary low carb bread alternative that just about covers all dietary requirements from gluten free, sugar free, high fibre, low carb etc. This product is so amazingly versatile that I will never just look at it as a wrap – it’s so much more!

To make Lo-Dough Cheese Scones in minutes you will need

A microwave

Microwaveable Mug

Baking tray lined with Baking paper

Ingredients – recipe makes 2 scones (I made 4 by doubling up on the ingredients)

1 piece of Lo-Dough blitzed into crumb

1 large egg

1 heaped tbsp Fat free Greek yoghurt – I used Fage Total 0%

30gms grated cheese – I used full fat

1/2 tsp salt

Method

Pre heat oven to Gas 6, Electric. 200 , Fan 180

Mix your Lo-Dough crumb, egg, salt, and 2/3 of the cheese with the yoghurt until thoroughly combined.

Press the mixture into your microwaveable mug and smooth level with the back of a spoon

Place in the microwave for two minutes. Cool for 30 seconds then turn onto a flat surface Slice into two horizontally and place your ‘scone’ cut side down onto the tray covered with baking paper. Sprinkle with the remaining cheese

Place in the oven for 5-10 mins until the outside of your scone dries and firms up. Remove from oven.Lodough_cheese_scones

Enjoy whilst still warm. Delicious!

These Cheese scones are sliced and counted as separate servings unlike the Fruit Scones, this is so you can limit your intake of cheese should you wish. Each scone has 15gms of cheese.
