Now what can I say apart from I have been imagining this for a few days but wanted to save it for a time when I would really appreciate the yumminess! So after finishing work on a challenging Friday I knew today was the day my Cream Tea would be born…and disappear quite quickly too!
I don’t know about you but I am always hungry on a Friday when I finish work. I think it’s my mind saying ok, I have worked for you all week – now it’s treat time! It certainly was too, but in a far more healthier way than some!
This recipe is not complex, not difficult, not hard to remember and only contains very basic ingredients – in fact the easiest part is the cooking !

To make a Lo-Dough Cream Tea in minutes you will need
1 piece of Lo-Dough blitzed into crumb
1 large egg
1 heaped tbsp Fat free Greek yoghurt – I used Fage Total 0% plus 2 more heaped tbsps
2 tsp sweetener
2 tbsp The Jam Goddess Strawberry, Raspberry and Chia Jam
Pre heat oven to Gas 6, Electric. 200 , Fan 180
Mix your Lo-Dough crumb, egg, sweetener, raisins and 1 heaped tbsp of yoghurt until thoroughly combined.
Press the mixture into your microwaveable mug and smooth level with the back of a spoon
Place in the microwave for two minutes. Cool for 30 seconds then turn onto a flat surface and slice in two . Spray your baking tray with frylight and place your ‘scone’ cut side down
Place in the oven for 5-10 mins until the outside of your scone dries and firms up. Remove from oven.
Decorate with The Jam Goddess Jam and the remainder of your yoghurt – enjoy whilst still warm. Delicious!
