Lots of us crave for a delicious creamy potato salad but nowadays we are also concerned about consuming too many carbs especially the day before weigh in! As we all know carbs cause the body to retain more water and although essential in our diets consuming carbs in moderation can help speed up weight loss. I only spotted this idea online this morning but was so keen to make a more Slimming friendly version of this great substitute for Potato Salad I had to give it a go. The bonus was that I had a cauliflower sat there screaming to be used and all the other ingredients to hand. Combined with a few minutes to spare I had the perfect recipe in the making!
To make Creamy Cauliflower Salad you will need
1 medium cauliflower head broken up into small florets
1 small red onion finely diced
3 boiled eggs, 2 of them chopped, 1 quartered
1 tsp Colmans Mustard Powder
6 pickled gherkins chopped
1 tbsp of pickled gherkin vinegar
1 stick celery finely chopped
1/2 tsp finely chopped dill ( I used dried)
1 tsp chopped chives (I used dried)
Freshly ground Salt and Black Pepper
Place the cauliflower florets in a pan, cover with water. Add a little salt and bring to the boil. Cook for apx 8-10 mins until the cauliflower is cooked but still has a little bite to it. Be careful as it can go too soft very quickly. Drain and leave to cool.
Whilst the cauliflower is cooling add the mayo, mustard powder and other dry spices to a bowl and stir. Add the celery and chopped egg, gherkins, red onion, dill, chives, pickle juice, salt and black pepper and stir. Once the cauliflower has cooled add to the bowl and stir. Season to taste . Garnish with the quartered egg and add a pinch of chopped spring onion tops to garnish if desired.
