Banana and Peanut Butter Bites

Banana_and_peanut_butter_bitesThese delightful little bites are perfect for snacks or as a breakfast with some fruit. They are quite speedy to make and will be ready within 30mins from the start. They work out at apx 25 calories each but I won’t work out the syn value for you – that’s all dependent on the peanut butter you use and the size of your banana! As a ball park figure they are apx 1 syn each.

To help you, Lo-Dough is 2 syns a piece (use code Debs10 for 10% off at the above link), I used my favourite sweetener – Fibre syrup which is 2 syns per tbsp and cooked banana is 4 syns per 100gm. Peanut butter varies but I used a lovely natural nothing added and nothing taken out Peanut Butter from Nutthing

Using Lo-Dough ensures no carbs are added and reduces the calories consumed that would be added if you used an alternative ingredient such as oats.

Let me tell you – the smell is divine. They are lovely hot or cold. The peanut butter bakes into the bites, makes a scrummy contrast in flavour and works so well with the banana.

To make Banana and Peanut Butter Bites you will need

A food processor

A baking tray

Baking paper

Mixing bowl

**Pre heat oven to gas 6, electric 200, fan 180 **

Ingredients

1 piece of Lo-Dough blitzed into crumb – (see link above re discount code)

1 medium banana broken up into small pieces

1 extra large egg

1 tbsp Sukrin Gold Fiber Syrup

1 tbsp 100% natural peanut butter

Method

Place the Lo-Dough crumb into a mixing bowl

Add the banana and egg to the processor and blitz until smooth

Add the banana mix to the bowl and add the Fiber syrup, stir.

Place baking paper on the baking tray.

Using a tbsp – spoon 10 rounds of the mixture evenly onto the sheet. Press down slightly in the middle with a teaspoon to make a small well. Divide the peanut butter between all 10 rounds – apx 1/3 tsp on each.

Place in the oven and bake for apx 20 mins until golden brown and the peanut butter forms a very slight crust.

Remove from the oven and allow to cool slightly before devouring! Banana_and_peanut_butter_bites
