Going low carb can be quite inspirational to your creative mind. This recipe was borne out of a desire to have something tasty and filling with a homemade curry. I didn’t want to consume rice, potatoes or carb laden naan bread, but at the same time I wanted to have something that would please and satisfy me and this was just so delicious. It is indulgent yet certainly on the low carb scale of healthy. I used a 50% reduced fat cheese, spices and 1 calorie oil sprays to create this great accompaniment to any curry or Tandoori meal.
2 pieces of Lo-Dough
60 gms 50% reduced fat cheddar cheese grated ( I used Tesco’s own brand)
Garlic oil spray
2 tsp ground cumin
2 tsp ground coriander
1/2 tsp chilli powder
2 tsp chopped coriander
Fresh ground salt and pepper
You will also need:
A piece of Tin foil just over twice the width of a piece of Lo-Dough
Pre heat oven to Gas 4 – Electric 180, Fan 160
Separate the two pieces of Lo-Dough from a freshly opened pack by removing the middle piece of paper and laying the two pieces of Lo-Dough separately on top of the outer pieces of paper
Spray each piece of Lo-Dough on the top side with garlic oil spray. Place the grated cheese evenly on top of the sprayed side of one piece of Lo-Dough with apx 1/2 tsp each of the ground coriander chilli and cumin.
Season to taste. Place the other piece of Lo-Dough on top to form a ‘sandwich’
The top and bottom pieces will have paper on the outer sides. Using a rolling pin roll over the ‘sandwich’ a few times to seal and flatten. Place the ‘sandwich on top of the tin foil to one side. Lift the top piece of paper and spray with butter oil spray. Sprinkle a couple of pinches of chilli powder on top, and do the same with the chopped coriander. Season. Flip the ‘sandwich’ over, remove the last piece of paper and spray and sprinkle with butter spray oil, chilli powder and coriander, then season as before.
Seal the ‘sandwich’ in the tin foil.
Place in the oven for 20mins.
