Lunchbox Lasagne

After the success on my last lunchbox recipe Quick and Easy Lunch Boxes I wanted to create something that was based on a classic dish yet full of incredible nutrients. A recipe that is filling, nutritious, low on carbs, syns or calories yet full on taste. My other stipulation was it must be quick and convenient to make and can be cooked in the microwave. Lots of workers have a microwave at work, and even if you are at home at lunchtime, this is a quick and easy lunch idea that can be ready within 15 mins and make enough for 3 lunchboxes.

Hence the Lunchbox Lasagne.

To make the Lunchbox Lasagne you will need

3 microwaveable lunchboxes with lids

A frying pan or a pan that is wide enough to fit the Butternut Squash sheets flat.

Ingredients

1 Jar Nowt Poncy Arrabbiata Sauce

6 Taste Inc Chicken Fillets of your choice chopped into small pieces

1 bag Baby Leaf Spinach

1 pk Butternut Squash Lasagne Sheets – parboiled for 3-4 mins and drained. Leave to cool.

6 slices of low fat mature cheese

100ml cold water

About the ingredients.

  • Taste Inc Chicken Fillets. I purchased mine from my local Tesco – they are also stocked in Morrison’s, Asda, Waitrose, Londis, Budgens and Muscle Food. The plain chargrilled fillets are free of syns on Slimming World and the spicy version is just 1/2 syn per fillet.
  • Butternut squash lasagne sheets. I bought mine from the chiller section in Sainsbury’s where the prepared vegetables are.
  • Low fat Mature Cheese – I used Cathedral City. Two of these slices on Slimming World are you healthy extra a choice.

Method

In your lunchboxes place a good handful of spinach in the bottom.

Place two tbsp of Nowt Poncy Arrabbiata sauce over the spinach – do not use more than 1/3 of the jar between the 3 boxes.

Top with two small handfuls of chicken

Cover each box with a Butternut Squash Lasagne sheets (using apx 1/3 of the sheets)

Continue layering, starting with the spinach, then the sauce, add the remaining chicken and top with the last of the lasagne sheets. Finish off with the last 1/3 of the jar mixed with 100 ml cold water and divide between the 3 boxes. Place two slices of cheese on the top of each box.

To add extra flavour I added a sprinkle of paprika, a pinch of nutmeg and a pinch of oregano. Place the lid on the boxes and chill. Eat within 3 days.

To cook, loosen the lid, and place the lunchbox in the microwave until piping hot- apx 4mins 30 secs depending on your microwave. The cheese melts through the entire dish and leaves a delicious flavour

If you prefer a cheesier topping, remove the cheese, cook as above, replace the cheese and leave covered for 1 min before eating Lunchbox_lasagne
