I had it drummed into me about speed whilst following Slimming World that you have to ‘get your speed in’ and this is a perfect way of doing just so.
There has been a lot of controversy recently about carb intake – should we cut carbs? Shouldn’t we? I sit on the fence a bit but acknowledge when I eat too many carbs I suffer from bloating and feel sluggish.
I have reached that point again and that’s where my trusty Low calorie bread alternative – Lo-Dough which is gifted to me for recipe development comes in. For me it’s great in its natural form and so versatile to play about with recipes to make them low carb. This is one of those recipes that I wondered, will it work? When I get the idea I just have to run with it. There’s only going to be one of two outcomes
A) It worked a treat!
B) move on Debs, it was a daft idea!
Fortunately for me it was A so hence I am here typing this recipe to share with you.
I see this recipe as part of a packed lunch, a snack when you are feeling hungry. A quick sandwich or simply as soldiers to enjoy with your boiled eggs in a morning. You could even add garlic to make a garlic bread substitute.
So why would you want to make this when you could just use Lo-Dough?
Well life is about variety. I love trying new foods – I just have a genuine interest and urge to try new foods and recipes. If they are healthy for you like this one, it’s a win win situation!
The other bonus about this is that it can be made with just 4 main ingredients or even 3 if you want to omit the Parmesan cheese.
It’s low Calorie and can even be used as a vegetarian pizza base to get those extra nutrients into your diet.
How to make Courgette Bread
You will need
A food processor
A few sheets of Kitchen roll
1 piece of Lo-Dough blitzed into crumb
1 medium Courgette grated
1 large egg
5 gms freshly grated Parmesan
Salt and pepper
Pre heat oven to Gas 6, Electric 200, Fan 180
Using apx 3 sheets of kitchen roll folded, press into the grated courgette to try and remove any moisture. Repeat.
Add the crumbs and egg
Mix thoroughly with a fork or spoon
Cover your baking tray with baking paper and spread the bread mix onto the paper. Press down to flatten and spread until you form a large oblong. Season with salt and pepper and add the grated Parmesan
Place in the oven and cook for apx 25 mins until the Parmesan turns golden. Remove from the oven and cut into quarters . Leave to cool.
Calories per 1/4 serving 41 cals
Carbs 2.2 gms
If you are on Slimming World it is 3 syns for the whole recipe so if you cut it into 6 it’s 1/2 syn per slice. Please check your own syn values to protect your own weight loss journey
