When I say Very Low Calorie Muffins, I mean Very Low Calorie Muffins! In fact these are only 35 calories each! It does vary slightly depending on your ingredients so it’s best checking but it will only vary a few cals at the most.
I wanted to make these to use up some strawberries I had in the fridge and the perfect way of making these very low calorie is to use the legendary Lo-Dough. The potential of using Lo-Dough in every day cooking has only really been touched on. It’s such a versatile food product whether you use it straight from the pack to make a delicious wrap, or venture further and make a crusty panini or a tasty pizza. The versatility of Lo-Dough enables you to take a high carb recipe and with a little imagination turn it into a far healthier bite!

These strawberry muffins could be the lowest calorie muffin you have ever made. To make these lovely Very Low Calorie Strawberry Muffins you will need
A tart tray with a minimum of 8 moulds
A food processor
A mixing bowl
**Pre heat oven to Gas 6, electric 200, fan 180 **
1 piece of Lo-Dough – the lightest lowest calorie bread alternative blitzed into crumb
1 extra large egg
25gms good quality coconut flour – I used Sukrin Coconut Flour
2 tbsp zero calorie sweetener. I used Sukrin 1:1
100ml semi skimmed milk
80 grams fresh strawberries chopped into small pieces
1/2 tsp baking powder
In a bowl combine all ingredients.
Spray your tray with Frylight. Divide the mixture between 8 of the moulds in your tart tray
Place in the oven for apx 25-30 mins until golden
Leave to cool slightly and then loosen with knife if necessary before everyone grabs them!
Mine were gone in 10 minutes as I had visitors and they thoroughly enjoyed them and the general feedback was that you wouldn’t know they were low calorie!
