When I say Very Low Calorie Muffins, I mean Very Low Calorie Muffins! In fact these are only 35 calories each! It does vary slightly depending on your ingredients so it’s best checking but it will only vary a few cals at the most.

I first made some Strawberry Muffins which didn’t last two minutes when guests turned up. Once they had gone I hurried to the local market to pick up some blueberries – it was a natural progression – who doesn’t love Blueberry Muffins?

The perfect way of making these very low calorie is to use the legendary Lo-Dough. The potential of using Lo-Dough in every day cooking has only really been touched on. It’s such a versatile food product whether you use it straight from the pack to make a delicious wrap, or venture further and make a crusty panini or a tasty pizza. The versatility of Lo-Dough enables you to take a high carb recipe and with a little imagination turn it into a far healthier bite!

These Blueberry and Chia muffins could be the lowest calorie muffin you have ever made.

To make these lovely Very Low Calorie Blueberry and Chia Muffins you will need

A tart tray with a minimum of 8 moulds

A food processor

A mixing bowl

Scales

Makes 8

**Pre heat oven to Gas 6, electric 200, fan 180 **

Ingredients

1 piece of Lo-Dough – the lightest lowest calorie bread alternative blitzed into crumb

1 extra large egg

25gms good quality coconut flour – I used Sukrin Coconut Flour

2 tbsp zero calorie sweetener. I used Sukrin 1:1

100ml semi skimmed milk

50 grams fresh blueberries – keep 8 whole ones on one side and chop the remainder into small pieces

1 tsp Chia seeds

1/2 tsp baking powder

Butter Frylight

Method

In a bowl combine the coconut flour, Lo-Dough crumbs, baking powder, milk, sweetener and egg

add the chopped blueberries and chia seeds and mix. Spray your tray with Frylight. Divide the mixture between 8 of the moulds in your tart tray. Press a whole blueberry into the top of each muffin

Place in the oven for apx 25-30 mins until golden

Leave to cool slightly and then loosen with knife if necessary before everyone grabs them!Very_low_calorie_blueberry_and_chia_muffin
