Have you ever bought an ingredient for a recipe then changed your mind a million times about what exactly you are going to cook with it?

I am so pleased I waited a couple of days to let this recipe develop in my head!

With the weather being so nice it’s hard to decide what to have for tea and having a strategy in place so you can have something either hot or cold is great and so useful. There is always one of the family that says – “I fancy something cold” or “I fancy something hot”

This recipe ticks both boxes. It can be reheated, place a cold slice in a frying pan and heat until piping hot or enjoy a slice with a salad. I should have called it Hot Weather Strategy Loaf!!

The Lo-Dough is not only an incredible wrap, a pastry alternative and much more, it is a remarkable carrier and filler to ensure a lighter less dense meat loaf, yet at the same time helping to retain all those lovely juices to maximise flavour.

Ingredients

1 piece of Lo-Dough blitzed into crumb

500gms less than 5% Fat minced Pork

1 medium red onion finely chopped

1 red pepper finely chopped

2 garlic gloves grated or crushed and chopped

2 tsp parsley

1 tsp paprika

1 tsp onion salt

1 tbsp Worcestershire sauce

1 tbsp Balsamic vinegar

1 tbsp tomato purée

1/2 tsp chilli flakes

1/2 tsp mustard powder

1 large egg

To make this Mediterranean Pork Meat Loaf you will need

A food processor

A large loaf tin

Tin foil

Non stick frying pan

Method

Pre heat oven to Gas 5 Electric 190 Fan 170

In a non stick frying pan sauté the onion for 5-6 mins until softened, add the peppers and garlic and sauté for a further 3 mins until the peppers soften slightly then let cool slightly l.

Meanwhile place all the other ingredients into a bowl

Add the peppers and onions and mix thoroughly

Place into a Loaf tin and press down firmly

Cover with foil and place in the oven for 1 hour

Remove the foil, baste and return to the oven for another 20 mins until golden brown. Allow to cool slightly before slicing

If you are on Slimming World this meatloaf is only 2 syns for the whole loaf. You can have a huge quarter of this for just 1/2 a syn. Please check your own syn values however to protect your own weight loss journey.
