I was worried I had made a mistake here. Not with having the Nowt Poncy Big Easy Creole Sauce, but having never tasted the sauce I wondered if my recipe would work. I needn’t worry. It was so tasty. Incredibly on Slimming World its Syn Free too!
But, and yes there is a but, after tasting the sauce I need another jar now as this is going to be so good with prawns as well! These sauces are so good!
It started with a chilli – yes, that’s what I intended to cook, but I followed my instincts and I am so pleased I did and let my imagination work instead.
To make the Nowt Poncy Creole Dirty Rice you will need
A pan with a good fitting lid – I used a small deep non stick frying pan
1/2 jar Nowt Poncy Big Easy Creole Sauce
1/2 each red and green peppers roughly chopped
1 small onion roughly chopped
125gms minced beef
30gms diced chorizo
1 Beef oxo
1 tsp hot chilli powder
1 mug boiling water
60gms basmati rice
Seasoning to taste
In your pan sauté the onion and chorizo until the onion is coloured by the chorizo. Add the peppers and sauté for a further minute. Add the beef and sauté until browned. Add the chilli powder. Sauté for 1 minute. Add the rice, sauté for another minute. Then add the Nowt Poncy Big Easy Creole Sauce and stir. Add the oxo and boiling water. Bring to the boil then reduce, cover with lid and simmer. Check occasionally make sure the rice isn’t sticking. If the mixture dries out before the rice is cooked add a little more water and replace the lid. When the rice is cooked season to taste and serve. I really enjoyed this and am looking forward to the portion I saved for tomorrow! Always chill rice quickly and keep covered in the fridge. I would only keep for 24 hours and make sure it is piping hot when serving.
