These Lo-Dough Mug Cakes are great for any time of day. This is my lowest calorie Mug Cake of the huge selection I have made so far! I enjoy them for breakfast but they are fantastic as a dessert or for those times when you feel the uncontrollable urge to eat something filling and tasty! I love them. Enjoying a different one every time is my idea of variety and starting the day with a satisfying smile! The benefits of using Lo-Dough instead of flour are fantastic. Lo-Dough is incredibly low in carbs, low in calories and has filling power. It’s also gluten free. Mug cakes are so filling and a gorgeous. To make a Summer Strawberry Mug Cake you will need
A microwaveable Mug and bowl and of course a microwave!
A food processor
1 piece of Lo-Dough blitzed into fine breadcrumbs – can be purchased here Low calorie bread alternative
1 large egg
3 medium strawberries quartered
2 tsp sweetener
I served mine with Quark flavoured with a Belgian Chocolate Options sachet but you can use your imagination to create your own combination.
In the same processor that you made the breadcrumbs, add the egg, sweetener and strawberries together and blitz slightly – just enough to blend the mix but leaving little pieces of strawberries intact. Spoon the mix into your cup. Place uncovered in the microwave for two minutes. Leave to stand for five minutes – your mug cake will continue to cook during this time. Loosen the cake from the cup with a knife and turn onto a plate. Serve and enjoy whilst hot with fat free yoghurt and fresh fruit
