I just knew this would be a winner before a piece touched my mouth! Lo-Dough made into crumb works so well with cheese and I knew it would turn out lovely and golden, crispy and crunchy!!
It’s such a simple recipe it hardly warrants documenting but for my records and to remind me how tasty it was I decided to do a blog post.
The beauty of this recipe is it’s only 1 syn per portion on Slimming World when using your healthy extra for the cheese. You can have 30gms of fresh Parmesan as your healthy extra and that’s a lot of Parmesan!
The only drawback to this recipe is it requires the oven on and the U.K. is baking right now – yes, we have an heat wave. Unusual I know but it does happen! So, with a roasting hot kitchen and blazing sunshine I am going to make this recipe short and sweet!
To make Chicken Parmesan you will need
2 large Shallow dishes or deep plates
Pre heat oven to gas 6, electric 200, fan 180
1 piece of Lo-Dough blitzed into crumb
2 chicken breasts butterflies (cut sideways but not fully through so you can open it like a butterfly or a book)
60 gms freshly grated Parmesan cheese
1 beaten egg
Fresh ground black pepper
Frylight (I use butter Frylight )
Cover your baking tray with baking paper.
Place the Lo-Dough crumb and parmesan in a shallow dish or deep plate and season with pepper. Parmesan is quite salty so no extra salt is required
Place the beaten egg in the other shallow dish
Dip one of the butterflied chicken breasts in the egg and coat both sides. Let the excess egg drip off and then dip into the crumb and Parmesan mixture coating again on both sides. Place onto baking paper on tray. Repeat with the remaining chicken breast. Press any remaining crumb in the dish on top of the chicken. Spray very generously with frylight.
Place in the oven for apx 30 mins Spraying again after 10 mins. If the crumb starts to burn turn the heat down slightly until cooked.
