Pineapple and Dark Chocolate Melt Skinny Mug Cake

Trust me with this one. Pineapple and Dark Chocolate are a match made in heaven. This flavour takes me back to when I was a small child. My mum used to buy a Pineapple and Dark Chocolate flavour cake which was possibly made by Cadbury’s or McVities. As a family of four and it being a small wrapped cake we used to enjoy a quarter of this cake each and it was incredible. The company stopped making this flavour after some years but I sometimes reminisce about how good it really was. The cake was split with with a very fine layer of pineapple jam and covered with a thin layer of dark chocolate.

These Lo-Dough Mug Cakes are great for any time of day. I enjoy them for breakfast but they are fantastic as a dessert or for those times when you feel the uncontrollable urge to eat something filling and tasty! I love them. Enjoying a different one every morning is my idea of variety and starting the day with a satisfying smile! The benefits of using Lo-Dough instead of flour are fantastic. To make a Pineapple and Dark Chocolate Melt Skinny Mug Cake you will need

A microwaveable Mug and bowl and of course a microwave!

A food processor

Ingredients

1 piece of Lo-Dough blitzed into fine breadcrumbs – can be purchased here

1 tbsp Pineapple Jam

1 tbsp Sukrin Gold

1/2 tsp vanilla essence

2 tbsp fat free natural yoghurt

2 squares dark chocolate

1 extra large egg

Method

In a microwaveable combine the breadcrumbs, egg, sweetener, and yoghurt together, mix thoroughly. This should be like a wet cake mix. Spoon the mix into your cup, smooth but don’t press down. Place uncovered in the microwave for 1 min 30 secs, Loosen the cake from the cup with a knife and turn onto a plate. Top with the pineapple jam and microwave for apx 20 secs, place the chocolate on top and microwave until the chocolate starts to melt – apx 15 secs

Serve and enjoy whilst hot with fat free yoghurt and fresh fruit
