When you have a lonely pack of blueberries in the fridge this is a perfect way of using them before they turn into fluffy fur balls. You know, that feeling when you reach into the fridge for that pack of blueberries or raspberries and they have quite simply gone off. Well that won’t happen when you have tried this simple mug cake, it’s a lovely breakfast, snack or dessert. Whatever time of day you decide to enjoy it you will always have a quick use for your fruit!

Other Lo-Dough Skinny Mug Cake recipes
To make a Blueberry and Chia Skinny Mug Cake you will need
A microwaveable Mug and bowl and of course a microwave!
A food processor
100 gms of fresh blueberries
1 tbsp water
1 extra large egg
2 tbsp fat free natural yoghurt
2 tsp plus another 2 tsp sweetener
1 tsp Chia Seeds
in a microwaveable bowl half the blueberries and add the water. Cover and microwave for apx 1min 30 secs until soft.
In another bowl combine all the breadcrumbs, egg, sweetener, chia seeds and yoghurt together, mix thoroughly. This should be like a wet cake mix. Spoon the cooked blueberries into the bottom of your cup, then cover with the cake mix and smooth but don’t press down. Place uncovered in the microwave for two minutes. Leave to stand for five minutes – your mug cake will continue to cook during this time. Loosen the cake from the cup with a knife and turn onto a plate. Serve and enjoy whilst hot with fat free yoghurt and fresh fruit
