I have seen a few variations of this recipe so I thought why not make it my own ! It’s only a couple of slight changes but nevertheless it’s a change. I am documenting this so I remember how I made it next time I get the corned beef tin out!!
It’s a remarkably tasty recipe and perfect hot or cold
To make this very easy Corned Beef Loaf you will need
A loaf tin – preferably a silicone one so it’s easier to remove
1 microwaveable container with lid
Ingredients
1 tin lean Corned Beef
300 gms fat free cottage cheese
1 large onion diced small
1 Beef oxo cube
1 tbsp Worcestershire sauce
1 medium potato (160 gms) diced small
3 large eggs beaten with a fork
Method
Place the potato in a microwaveable container with lid on loosely and microwave for 3 mins. Stir with fork to separate
Dice the corned beef small and mix with the onion and potato. Crumble in the oxo and add the Worcestershire sauce. Mix thoroughly. Add to the bottom of the loaf container and spread evenly. Press down.
In a bowl add the cottage cheese and egg and mix thoroughly together with a fork.
Pour over the corned beef mixture.
Place in the oven Gas 6, electric 200, fan 180 for apx 40 mins until golden. Allow to cool slightly before serving
