Mini Spiced Date, Pecan and Carrot Cakes

This was an experiment, as are all my recipes. I was going through my kitchen cupboards and found dates and pecans that really needed using before I forgot about them entirely. I am always in danger of becoming overloaded with ingredients as I pursue my love of cooking to satisfy my creative streak.

This is another Lo-Dough creation. Using Lo-Dough which replaces the flour normally used in cake making reduces the carbs, calories and gluten content and produces a tasty low calorie but nutritious cake. I didn’t add sugar, just a little Sukrin Gold sweetener but if you don’t have a very sweet tooth you can omit this as you can still taste the sweetness from the dates and apple. They are just full of natural ingredients so perfect for clean eating and diet plans.

It’s Easter Sunday as I write this. The first time in my whole life that I have never had an Easter Egg. It’s by choice I don’t have an egg but in order to get through the day with a smile on my face instead of hints of sadness and chocolate withdrawal I decided to do some baking!

I was really fumbling about trying to put something together that was nutritious using my healthy ingredients and I am pleased how they turned out. They have a lovely nutmeg and cinnamon flavour with undertones of the other ingredients to make a mini cake that will go perfectly with a cuppa!

To make my mini Spiced Date, Pecan and Carrot Cakes you will need

2 mini 12 hole muffin trays ( or one if you don’t mind cooking one lot after the other like me!)

A large bowl

A food processor

Ingredients

2 pieces of Lo-Dough breadcrumbed in processor – can be purchased here

50 gms chopped pecan nuts

100gms dried dates blitzed in processor

3 large eggs

2 medium carrots finely grated

2 small sweet apples grated

1.5 tsp baking powder

1 tsp ground cinnamon

1/2 tsp ground allspice

1/2 tsp ground nutmeg

1 tsp ground ginger

2 tbsp Sukrin Gold Sweetener – stocked on Amazon and Holland and Barrett (optional)

Frylight for greasing your muffin trays

Method

Pre heat oven to Gas 5 , Electric 190, Fan 170

In a large bowl combine all ingredients together and mix well – yes it really is that simple!

Spoon the mix into greased muffin trays and bake in the centre of the oven for apx 25 mins. Remove from oven and leave to cool before enjoying.
