Banana and Salted Caramel Mug Cake with a Peanut Butter Drizzle

What a great combination! The sweetness of the banana with the sweet saltiness of the caramel and a decadent drizzle of peanut butter (optional) makes this one of my most indulgent cakes so far. But although it’s indulgent it doesn’t break the calorie bank. I couldn’t wait to make this cake and going to work after enjoying this makes for a great start to the day

There are a couple of tweaks you can make if you want to make a lower calorie version. You can omit the caramel and also the peanut butter, but hey, you only live once and if this cake appeals to you why not go the whole hog as long as you count the calories or syns!

To make a Banana and Salted Caramel Skinny Mug Cake with a Peanut Butted Drizzle you will need

A microwaveable Mug and of course a microwave!

A food processor


1 piece of Lo-Dough blitzed into fine breadcrumbs – can be purchased here Low calorie bread alternative

1 extra large egg

1/2 tsp salted caramel flavouring

2 Tsp sweetener

50gm mashed banana

1 tbsp caramel ( I used Bonne Maman)

12gms PB Fit Peanut Butter powder ( from Morrison’s) mixed with tbsp or two of cold water to form a drizzle


In a bowl combine all the breadcrumbs, egg, sweetener, banana and salted caramel flavouring together, mix thoroughly. Spoon half the mix into your mug. Make a well and add the caramel cover with the rest of the cake mix and smooth. Place uncovered in the microwave for two minutes. Leave to stand for five minutes – your mug cake will continue to cook during this time. Loosen the cake from the cup with a knife and turn onto a plate. Pour the peanut butter drizzle over the cake. Serve and enjoy whilst hot with fat free yoghurt and the rest of your banana sliced
