Ken’s Daughter Devon gave me this idea. Devon loves healthy food and was telling me about Courgette fries in a crispy crumb that sounded amazing, so, with the idea sewn I had to give these a go!
I have no idea what the original ones were like so I had a browse. Most are dipped in egg, flour, ground almonds, Panko breadcrumbs, vegetable oil and polenta are all used is various recipes then deep fried but I had a simple idea and decided to run with it.
Courgettes are a moist vegetable anyway, and after peeling moisture seeps out through the flesh and they do feel wet so I decided to omit the egg. I also decided that flour wasn’t an option and decided to use dried potato. I know on Slimming World this would be considered a ‘tweak’ if you were using it for such, so for the couple rounded tablespoons used I would say allow 1 syn and don’t feel bad because it’s called a tweak. Just count 1 syn and enjoy it. Don’t feel guilty about something you are counting! There will be some leftover also. I would discard it.
To make my ‘Very Simple Crispy Parmesan Courgette Fries you will need
An oven proof baking tray
Pre heat the oven to gas 7. Electric 200, fan 220
1 large Courgette cut into ‘chips’
30gms finely grated fresh Parmesan cheese ( hexa)
2 rounded tbsp Smash or similar
Ground black pepper
Place the Parmesan, smash and black pepper to taste in a shallow dish large enough to place one piece of Courgette in at a time and stir
Lay the baking paper on the tray
Taking one piece of Courgette at a time firmly press into the Parmesan mix turning until it has been coated lightly all over. Lay this on the baking paper. Repeat with all the Courgette pieces
Place in the top of the preheated oven and cook until golden brown.
