With Easter fastly approaching I came up with the idea of a little insurance policy for those who are wanting not to overindulge on the chocolate. It’s so hard when Easter Sunday arrives and everyone is indulgently tucking into their Easter Eggs not to feel left out. I wanted to make a mug cake that would take the edge off those chocolate urges and this one will certainly do that! It’s slightly more calories than my other recipes but half an Easter egg is more than ten fold that!
These Lo-Dough Mug Cakes are great for any time of day. I enjoy them for breakfast but they are fantastic as a dessert or for those times when you feel the uncontrollable urge to eat something filling and tasty! I love them. Enjoying a different one every morning is my idea of variety and starting the day with a satisfying smile! The benefits of using Lo-Dough instead of flour are fantastic. Lo-Dough is incredibly low in carbs, low in calories and has filling power. It’s also gluten free. Mug cakes are so filling and a gorgeous. Be creative and experiment with flavours and fillings and create your own signature Mug Cake!
You will notice that mine has a few ‘extras’. I ‘acquired’ a mini chocolate egg which sits on the top for decoration. Be careful not to sit this on top too early or it will melt and you will need another!! My chick has chocolate on its face as this is egg no2 in the pictures. I also purchased some edible gold foil. Don’t bother with this. I had in mind to place ripples of it on my plate and to sit the cake on top. I would have chicks ‘swimming’ in it and it would be called ‘On Golden Pond’ – in reality as soon as I opened the pack I knew it wouldnt happen. The pieces (I paid £3 for) were less than the size of a matchbox and there were only 2! I tried to place them on top of the cake and when the steam got hold of them they disappeared to nothing and stuck to my fingers! Lesson learnt ! You can see remnants on top of my cake.

To make an Easter Chocolate Skinny Mug Cake you will need
A microwaveable Mug and of course a microwave!
A food processor
1 piece of Lo-Dough blitzed into fine breadcrumbs – can be purchased here Low calorie bread alternative
1 extra large egg
1 tbsp unsweetened cocoa powder
2 tsp sweetener of your choice
Tbsp Nutella or similar
1 mini chocolate egg for decorating
Small decorative chick
1 tbsp water
In a bowl combine all the breadcrumbs, egg, cocoa powder, water and sweetener, mix thoroughly, making sure you cannot see any white bits. Spoon half the mix into your mug and make a well. Place the spoonful of Nutella into the well and cover with the rest of the mixture. Place your mug cake in the microwave for two minutes. Leave to stand for five minutes – your mug cake will continue to cook during this time. Loosen the cake from the cup with a knife and turn onto a plate. Serve with fat free yoghurt.
