Strawberry and White Chocolate Skinny Mug Cake

If like me you get bored with the same thing at breakfast time these Skinny Mug Cakes are amazing. Changing the flavours each morning gives me something to look forward to, a challenge to start the day, and of course I can’t wait to share with whoever is reading this. I haven’t enjoyed breakfast so much in ages! So today it’s strawberries, strawberries go wonderfully with chocolate. Normally it’s dark or milk chocolate that strawberries are paired with but I fancied a melt in the middle white chocolate centre – if dark or milk chocolate is your preference then just change them – it will hardly make any difference to the nutritional values.

I just fancied a milky creaminess with the strawberries- sweet and decadent just like me ( that is a joke – honest!)

The benefits of using Lo-Dough for your Mug cakes instead of flour are fantastic. Lo-Dough is incredibly low in carbs, low in calories and has filling power. It’s also gluten free. Mug cakes really are so filling, full of healthy ingredients and also gorgeous breakfast.

1 extra large egg

50gms strawberries finely chopped then mashed with a fork

Method

In a bowl combine all the breadcrumbs, egg, and strawberries, mix thoroughly. Spoon half the mix into your mug and make a well. Place the chocolate chips into the well and cover with the rest of the mixture. Place your mug cake in the microwave for two minutes. Leave to stand for five minutes – your mug cake will continue to cook during this time. Loosen the cake from the cup with a knife and turn onto a plate.
