Apple and Cinnamon Skinny Mug Cake With Golden Syrup

I don’t eat enough apples. Ken and Charlie always share an apple most days and their favourite is a Pink Lady. I decided to make this mug cake using just 40gms of eating apple which if you are on Slimming World is only 1 syn. The rest of the Apple Can be served on your plate. You can actually have 250gms of cooked eating apple as your hexb on Slimming World but I don’t have a large enough mug or enough eggs to hand but if you don’t mind splitting your hexb and can do it precisely then you could theoretically count it as part of your allowance although I don’t think Slimming World are keen on you doing this – don’t forget though, this is your weightloss journey and you do what works for you.

The benefits of using Lo-Dough for your Mug cakes instead of flour are fantastic. Lo-Dough is incredibly low in carbs, low in calories and has filling power. It’s also gluten free. Mug cakes really are so filling, full of healthy ingredients and also gorgeous breakfast.

To make an Apple and Cinnamon Skinny Mug Cake you will need

A microwaveable Mug and of course a microwave!

A food processor

Ingredients

1 piece of Lo-Dough blitzed into fine breadcrumbs – can be purchased here Low calorie bread alternative

1 extra large egg

40gms grated eating apple

1 – 2 tsp cinnamon depending on how much cinnamon you like

1 tbsp water

1 tablespoon golden syrup

Method

In a bowl combine all the breadcrumbs, egg, grated apple, water and cinnamon, mix thoroughly. Drip the syrup into the bottom of your cup. Spoon the cake mix on top. Do not press down. Place your mug cake in the microwave for two minutes. Leave to stand for five minutes – your mug cake will continue to cook during this time. Loosen the cake from the cup with a knife and turn onto a plate. Serve with fat free yoghurt and fresh fruit such as the rest of the apple and fresh berries
