Homity Pie

I have to confess to not making many vegetarian dishes but this one has been inspiring me for a while. With National Pie Week in full swing I wanted to create a vegetarian pie using the legendary Lo-Dough that was full of the comfort factor, compatible with Slimming World, relatively low in calories, tasty, filling and without the bloat factor. A bit of a tall remit really but I think this one ticks all boxes. It comes in at less than 200 cals a portion and only 1/2 syn plus 1/2 Hexa on Slimming World. It’s a pie that can be eaten hot or cold, you can add various meats if you like for a non vegetarian option such as bacon, chorizo or even salmon for something different – they would all work well.

Homity Pie dates back to the Second World War and was popular with the Land Girls. When supplies were limited this was a tasty filling meal after a hard days work.

There are a few variations of this pie around including the use of cream, apples, peas etc but I wanted to produce a unique Homity Pie using Lo-Dough for under 200 cals per serving and keep the syns at a minimum.

To make Homity Pie you will need

1 x 6.5 inch oven proof pie plate

Pre heat oven to Gas 5, electric 190, fan 170

Ingredients

1 piece of Lo-Dough – can be purchased here Low calorie bread alternative

400gms potatoes diced (apx 2cm cubes) – I use a floury potato such as King Edward

100gms diced leeks

1 medium onion cut into quarters and sliced thinly

1 clove of garlic crushed or 1 tsp dried minced garlic

1 large beaten egg

140gms low fat protein cheese grated – I use Eat Lean

1 tsp mustard powder

1 level tsp dried thyme

1 level tsp chopped dried parsley

Method

Place the diced potato in a small pan and cover with water, add salt if preferred. Bring to the boil, reduce heat to a fast simmer and cook for apx 3 minutes until the potato is cooked. Be very careful as it’s so easy to overcook. Drain and place in a large bowl

In a non stick frying pan sprayed with frylight add the leeks, onion and garlic and fry until softened

Add thyme, parsley and mustard powder to the bowl and mix thoroughly

Add the leeks to the bowl along with 3/4 of the cheese and the beaten egg. Season and mix thoroughly

Spray the pie plate with frylight and press the Lo-Dough into it. Place a spoonful of the filling in the middle to hold it in place, then add the rest of the filling, spreading it to the edges. Don’t be frightened to get messy and use your hands! Press the mixture in firmly right to the edge of the pie. With a fork, rough up the top slightly to give a more rustic look

Add the remaining cheese

Place on a baking sheet in the oven for apx 25-30 mins until golden

Serve hot or cold
