Cream of Mushroom Soup

A bowl of delicious thick comforting Cream of Mushroom Soup just hits the spot whether it be on a cold day or just when you want a ‘hug in a mug’ for those on Slimming World it works out at 1/2 syn plus 1/2 hexa per serving and is packed full of speed. This is a simple and extremely tasty soup which doesn’t leave you with that feeling… hmmm I need something else!

To make this soup which serves 2

Ingredients

Two large Brown mushrooms ( Portabello type) finely chopped (150gm)

1 small pack of button mushrooms finely sliced (150gm)

1 medium onion finely chopped

1 tbsp fresh thyme leaves

1 tbsp cornflour

250ml semi skimmed milk

1 bay leaf

1 tbsp soy sauce

1 chicken or vegetable stock pot

Salt and pepper to taste

Frylight

Method

Sauté onion in a deep pay sprayed generously with frylight. I always use butter Frylight but use which you prefer. Sauté until soft. Add the mushrooms and thyme leaves and sauté over a medium heat until the mushrooms are completely soft – they will have reduced quite considerably in size and released some juices. Add 200ml cold water, bay leaf and stir in the cornflour until thoroughly mixed. Add the milk, soy sauce and stock pot. Stir thoroughly and bring to a gentle simmer stirring all the time. Do not boil. Simmer for 5 mins uncovered. Serve
