Lo-Dough Queen of Puddings

Whilst chatting away with my sister in law Julie whilst on holiday we were discussing puddings and I said I wanted to make a delicious pudding with Lo-Dough. Something different to what has been created before. Being a cook herself she sowed the seed of a Queen of Puddings dessert using Lo-Dough for the breadcrumbs, therefore reducing the amount of calories and carbs. So my mind set ticking and this is what I have created! Retaining all the taste but reducing the sugar and carb content isn’t entirely easy but I have created a delicious pudding for under 200 calories a portion. It’s quite high in syns on Slimming World at 9 syns but trust me it’s worth it and it’s a dessert you can make and enjoy with the family! You can reduce the syn value by using part of your hexa – this will take the syn value to 7.5

To make this you will need

A whisk – preferably electric, it makes the job of whisking so much easier!

A food processor to make the breadcrumbs

An oven proof flan dish

A Baking tray


2 pieces of Lo-Dough blitzed into breadcrumbs

100gms low sugar raspberry jam

3 tbsp sweetener

Zest of one lemon

1.5 tsp butter

2 large eggs

350mls skimmed milk

25gms plus 1 tsp golden caster sugar

Cooking and preparation time apx 1hr


Pre heat oven to Gas 5, Electric 190, Fan 170

In a small pan, bring the milk to the boil. Take off the heat and add the breadcrumbs, butter, sweetener and lemon zest. Set aside to cool for apx 15 mins

Meanwhile separate the eggs. In a small bowl using a fork whisk the egg yolks. Once the milk mixture has cooled for 15 mins stir in the egg yolks and then pour the mixture into the flan dish. Place on a baking tray in the oven and bake until set. This takes apx 30- 45 mins depending on your oven

In a small pan heat the jam over a low heat until it melts, stirring occasionally. Once the milk mixture in the flan dish is set, remove from the oven and spread the ham evenly all over

Using a whisk in a large deep bowl, whisk the egg whites until stiff peaks have formed. Add the 25gms of caster sugar and whisk again until thoroughly mixed. Using a tablespoon spoon the egg whites on top of the jam making sure there are no gaps. I find it easier to spoon it around the edges first, then fill in the middle and spread it evenly with the back of a tablespoon. Sprinkle the remaining tsp of caster sugar over the egg white and return to the oven for apx 10 mins until golden.
