Deep Pan Stuffed Crust Chilli Pizza

Arriving home hungry on a snowy day hunger was gnawing at my brain to make something indulgent. How do you have something indulgent yet healthy? The two scenarios you may think are polar opposites but that’s not true when you start to explore exciting ways to use Lo-Dough.

I had some leftover chilli in the fridge from the night before but not really enough for a meal. Just enough to make a pizza. It was my intention to make a pizza with it but I wanted to make one a little different. I had been thinking about stuffed crust pizzas – how good they are, deep, oozy, filling and tasty and so the Lo-Dough Deep Pan Stuffed Crust Chilli Pizza just had to happen. Here’s how to make it!

Pre heat oven to gas 6 , electric 200, fan 180

You will also need

A baking tray

Rolling pin

Tin foil

Knife and fork as this pizza is heavy and won’t pick up – just like a deep pan pizza!


2 pieces of Lo-Dough – can be purchased Low calorie bread alternative

One small portion of cold leftover chilli

Half a red pepper finely diced

Half a green pepper finely diced

1 small red onion finely diced

105gms Eat Lean Protein Cheese grated

2 tsp chopped oregano

1 tsp paprika

Garlic spray oil

Sliced jalapeños to taste



Firstly, with a rolling pin, roll both pieces of Lo-Dough between two pieces of the paper it come in so they are thinner. Peel the paper off carefully. In a frying pan sprayed with frylight, heat until hot and add one piece of Lo-Dough. Fry for apx one minute. Spray the top of the Lo-Dough with spray oil, flip over and fry for one minute.

Place the fried Lo-Dough on a baking tray.

Add 3/4 of your cold chilli, spread outwards leaving a 3cm border around the edges. Using a quarter of your grated cheese press it around the edges of the base

Using the same frying pan, add the remaining piece of Lo-Dough and cook until hot just on one side. When it’s hot carefully lift from the pan and place on top of the base. Press all around the edges so the cheese starts to partly melt and stick the two pieces of Lo-Dough together.

Spread the remaining chilli on top

Add the chopped peppers and onion

Add the remaining cheese and sprinkle with oregano and paprika

Add jalapeños if preferred

Cover loosely with tin foil and place in the oven for apx 25 mins – serve.
