If you haven’t noticed already, a bit of spice is creeping into my diet. It must be as a result of all the delicious tapas dishes I tried whilst in Spain. I even bought some tapas style dishes immediately from Morrison’s for £12 when I got home as I was inspired so much!
Having said that, I am still a lightweight when heat from spices is concerned and you will never see me eating a hot curry!
So this recipe was inspired by Chorizo! Yes whilst as the airport in Malaga where they have a great but expensive delicatessen, I was eyeing up all the continental sausages and thinking they would be far cheaper in Aldi! So off to Aldi I took myself the morning after landing, got a weekly shop in and a ring of Spicy Chorizo at a fraction of the cost in Malaga airport!
So it’s been sat there and I have been wondering what to do with it until now…..
So here’s my take on tapas – Sweet Paprika Spiced Beef with Chorizo. Don’t go leaving the Chorizo out as you won’t get a depth of flavour and it’s only 1.5 syns per serving on Slimming World
Serves 4 generous tapas size dishes
50gms Spicy Chorizo (6 syns)
400gms less than 5% fat minced beef
1 red onion finely chopped
1 red pepper finely chopped
1 fat clove of garlic grated
2 tsp sweet paprika
1 tsp ground cumin
1 tsp salt
8 medium size to small mushrooms halved or quartered
1 400gm tin of chopped tomatoes
1 Beef oxo
Spray a medium sized pan that has a lid with frylight. Sauté the onion, chorizo and garlic until the chorizo starts to colour the onion. Add the paprika, cumin and salt and fry for a minute on a low to medium heat. Add the peppers, stir, add the mushrooms, stir until coated, crumble the oxo into the pan and add the tin of tomatoes. Stir thoroughly and heat until steaming, slightly bubbling and piping hot. Place the lid on the pan and reduce heat to simmer. Simmer for 30 mins. Serve as part of a tapas plate with other taster dishes of your choice or as part of a main meal.
Served here with Syn free Chicken Doner with Fat free Mint raita, Roasted potatoes on a bed of roasted peppers (a cubed pre baked potato sprayed with frylight and cooked in the oven sprinkled with sweet paprika)
