I always like to shake things up a little. My other half – Ken loves Diet Coke chicken but to be honest I have done this to death in the past and have no inclination to resurrect it in its original form! So, thinking cap on and some pork loin steaks in the fridge I came up with this tasty spicier alternative Five Spiced Pork with Diet Coke.
It’s such a simple recipe with simple ingredients – great with noodles, rice or healthy cooked chips.
4 Pork loin steaks fat trimmed and cut into strips
2 small red onions chopped into bite size chunks
2 small red peppers chopped into bite size pieces
2 tsp dried minced garlic
2 heaped tsp five spice powder
2 tbsp Worcestershire sauce
1 can Diet Coke
Seasoning to taste
Thoroughly coat the pork strips in five spice powder and set aside
In a large frying pan sprayed with frylight sauté the onions and peppers for 5 mins. Add the coated pork strips and fry until sealed – apx 5 mins.
Add passata, garlic, Worcestershire sauce and stir thoroughly. Add Diet Coke. Bring to the boil then reduce heat, cover pan and leave to simmer Simmer for apx 30 mins then remove the lid and reduce liquid down to the consistency you prefer by turning the heat up and removing the lid

I served mine with a boiled nest of dried egg noodles . It looks far more I know but there was only one nest and it was spread thinly on my plate!!
