Cajun Chicken Pizza Swirls

After Lo-Dough posted an amazing picture of some pizza swirls that looked delicious I had to give these a go. The two key ingredients that keep this recipe super healthy are Lo-Dough and Protein Cheese from Eat Lean

This recipe is really a meeting of two genius products that are real game changers in the healthy eating and restricted diet market and I can’t wait to share it with you.


1 piece of Lo-Dough – can be purchased here Low calorie bread alternative

70gms Protein Cheese finely grated (if you are on Slimming World you can have 70gms as your hexa) which can be found in supermarkets

3 wafer thin slices cooked chicken

2 tbsp passata

2 tsp chopped basil

1 -2 tsp Cajun spices

A good handful of washed spinach leaves

1 fat garlic clove thinly sliced

Spray oil

1/4 red pepper finely chopped

1/2 small red onion finely chopped

You will also need

Tin foil

A baking dish

Pre heat oven to gas 6, electric 200 fan 180


Spray one side of your Lo-Dough with spray oil and lay on a piece of tin foil large enough to roll and wrap the Lo-Dough in

Spread the passata evenly over the Lo-Dough

Sprinkle the basil and most of the Cajun spices over the passata

Lay the garlic evenly on top then add the chicken, half of spinach and half of the cheese

Carefully roll the Lo-Dough and wrap securely with tin foil

Place on a baking tray and place in the oven for 25mins ensuring the chicken will be reheated properly

Remove from the oven and slide onto a chopping board

Using a sharp knife careful cut the Lo-Dough into slices and arrange in a baking dish with the remainder of the spinach

Sprinkle most of the red pepper and onion all over saving a little for the top. Add the grated cheese and the remaining red pepper and onion. Season with fresh ground salt and pepper and another sprinkle of Cajun spices and pop back into the oven- don’t worry if you have too much red pepper and onion left. You can always use the leftovers for a tasty pizza!

Bake for apx 15-20 minutes until the cheese has melted. Serve with a little sauce – I enjoyed mine with a sugar free chilli and garlic sauce , some gherkins and cherry tomatoes
