I love a good winter warming soup. I prefer chunky strong flavour soups to those blended within an inch of their lives. If you prefer a smoother soup though this can be blended smoother.
For this soup I wanted it to be packed with speed vegetables and I have done just that. With plenty of carrot, onion, tomato and spinach this makes a fantastic filling lunch or snack for any slimmer. It is Syn Free on Slimming World but please check for any syns yourself to protect your own weight loss.
1 large onion finely chopped
1 large carrot finely chopped
1 tsp each of lazy garlic and lazy ginger (finely chopped)
1 tsp each of ground ginger, ground cumin, ground coriander, turmeric, chilli flakes, salt
1 tbsp each of medium curry powder, tomato purée
3 medium chopped fresh tomatoes
200gm red split lentils
2 vegetable or chicken stock pots
1 tsp sweetener
100gm washes spinach (discard large stalks and then chop the leaves)
1 handful chopped fresh coriander
apx 1200ml boiling water (add more if needed)
In a large pan sprayed with frylight sauté the onion, ginger, garlic, and carrot until glazed. Add add all spices, salt and tomato purée and sauté for a further minute
Add boiling water, then add stock pots, sweetener, tomatoes and lentils and bring to the boil. Reduce heat, cover pan and simmer for apx 20 mins until the lentils and vegetables are cooked. Add the chopped spinach and cook for a further five minutes. If the soup is too thick add a little more boiling water and cook for a further minute. Add fresh coriander. Cook for 1 minute. Season to taste and serve
