Now I have to admit this isn’t my recipe – I saw it on Slimmingworld SionMills Facebook page and thought what a fantastic idea! I had to give it a go and have only made a slight tweak . With all the controversy about the change in syn values for Mug Shots and noodle pots I thought what a great idea. Now the first thing I have to say about this recipe is it’s full of goodness. No rubbish just good nutritious food. The other thing is, there are no specific quantities for making this. Find a big jar and fill it basically. You don’t have to eat it all at once. Just keep in the fridge once cool, ladle some into a cup, blast it in the microwave to reheat and you will have a tasty nutritious lunch or snack that’s already full of speed and ready faster than a mug shot takes to cook! It’s perfect for taking to work with you or to have as your on plan no syn snack any time of the day.
To make this you will need a large jar with a tight sealed lid. If you don’t have this you can use a food container as long as it doesn’t leak and the lid seals tight to avoid spilling.
1 grated carrot
1 finely chopped onion
Apx 1 cup frozen garden peas
Apx 1 cup dried pasta vermicelli ( I got mine in the Polish foods section at a Tesco extra)
1/2 finely chopped red pepper
A glug of soy sauce
1 tsp lazy garlic
1 tsp lazy ginger finely chopped
A glug of Worcester sauce
1/2 tsp mustard powder
1/2 tsp Chinese 5 spice powder
2 Beef stock pots
1 tsp tomato purée
Salt and pepper to taste
Boiling water- enough to top up the jar once filled with the other ingredients
To make simply combine all ingredients into your container of choice. Top up with boiling water, stir well and seal the lid. Leave for 5 mins until the pasta has softened. Enjoy guilt free!!
