I adore Chinese flavours, ribs especially, but they can be a little fatty sometimes. I just happened to have a nice piece of pork loin from Silsden Butchers who deliver nationwide ready to create something tasty with and thought of this. Marinades can be quite hefty in calories or syns if you are on Slimming World but used in this way and divided between a few portions it minimises the hit but not the taste! To achieve a deeper depth of flavour marinade covered in the fridge for 48 hours
Ingredients for marinade
4 tbsp honey
100ml medium sherry or port
4 tbsp hoisin sauce
1 tbsp dark soy sauce
1 tbsp Chinese five spice powder
For the meat
Large piece of Pork Loin (enough for 6 servings – fat trimmed)
Using a sharp knife make vertical slits in the meat about 2cm depth and 2 cm apart.
Combine marinade ingredients and baste the meat thoroughly. Cover and place in the fridge overnight or for up to 48 hours basting occasionally at intervals for a more intense flavour.
When ready to cook preheat oven to gas 5, electric 190, fan 170.
Remove meat from marinade and place in oven proof dish, cover with tin foil
Bake for apx 1 hour and then remove tin foil. Turn oven up to full. Baste and return to oven, repeat every 10 mins for a further 40 mins until it is blackened and crispy on the outside.
