Lo-Dough Festive Pie

Following on from the success of the Lo-Dough Festive Slice Ken said to me why don’t you recreate the Festive Pie that was so popular at Christmas and produced by a well known fast food chain. You can only imagine the calories in one of those which I presume are deep fried!

So the challenge was on!

The pie in question is a mincemeat and custard filled pie so it really was a challenge and after 4 attempts I think it’s fair to say I have done it!

First of all – my friends at Lo-Dough gave me a very handy hint – roll the Lo-Dough thinner with a rolling pin. This gives a thinner more pastry like texture. Perfect for my creation. Now never having tasted said pie I have to only imagine what one tastes like so please bear with me. It’s all guesswork!

Preheat oven to gas 6, electric 200,fan 180

Prep time 25 mins

Cooking time apx 20 mins

Serves 4

Ingredients

4 pieces of Lo-Dough (rolled thinner with rolling pin)

150gms mincemeat

150gm low fat custard

1tbsp cornflour

2 tsp white sugar (to crisp the shell)

Butter Frylight

Warm to hot water for binding the Lo-Dough

1 egg beaten for basting

Method

Lay flattened Lo-Dough on a flat surface. I place it on the paper it comes in. Cut each piece into an oblong – don’t worry about waste , you can use the off cuts to make stuffing to have with a roast dinner!

Put the cornflour into a saucepan and add 3 tbsp cold water and whisk. Add custard. Turn the heat onto medium and stirring all the time heat the custard until it thickens. Do not boil. Leave to cool for 10 mins

Spread mincemeat and custard between all 4 pieces as per picture below

Baste the Lo-Dough all around the edge with warm to hot water. Roll over to form a pie with an overlap and press the edges together carefully so no mixture escapes.

Baste with egg and sprinkle each pie with 1/4 tsp sugar. Turn over and repeat making sure the seam is on the bottom. Lay the parcel on a baking tray sprayed with spray oil and bake in the oven until golden. Apx 20mins. Leave to cool for 5-10 mins

Serve – be careful not to burn your mouth as the mincemeat will be extremely hot!
