Cheesy Cauliflower and Bacon Bake

Serves 4

1/2 syn plus 1 x hexa per portion or 6.5 syns per portion

Ingredients

1 medium cauliflower broken peppers into small florets

1 small can sweetcorn drained

1 pack of lean smoked bacon, grilled and roughly chopped

10 Happy Cow Light cheese triangles

1 small red pepper finely sliced

350ml skimmed milk

1/2 tsp mustard powder

1 tbsp cornflour

1 tsp dried minced garlic

30 gms cheddar cheese grated

Frylight

Method

Place cauliflower in a large pan of salted water. Bring to boil and simmer until cauliflower is slightly less than el dente- apx 3 mins. Meanwhile, in a frying pan sprayed with frylight stir fry the pepper until softened slightly – apx 3-4 mins Drain cauliflower and place in a large baking dish. Add cooked bacon, sweetcorn, and red pepper and mix.

In a medium pan add milk, cheese triangles, mustard powder, garlic and cornflour. Bring to boil slowly stirring all the time until cheese has melted. Season with fresh ground salt and pepper .

Pour sauce over the cauliflower and mix thoroughly with a spoon

Top with grated cheese and bake in a medium oven Gas 5, electric 190, fan 170 until golden on top. Serve.
