Lo-Dough Rarebit with bacon
1 syn plus hexa per serving, serves 2.
1 piece Lo-Dough 2 syns
2 grilled bacon rashers roughly chopped
4 laughing cow light ( hexa)
2 tbsp leftover mashed potato
1 large egg
1/2 tsp mustard powder
2 tbsp milk (hexa)
30 gms finely grated cheddar cheese 6 syns
Salt and pepper
Pre heat oven to gas 5 – electric 190 or 170 for fan oven.
Cook two bacon rashers , roughly chop and set aside
Spray Lo-dough with frylight on both sides
Pop Lo-dough onto a baking sheet and place in oven until the ends start to curl up
In a bowl mash laughing cow, potato, mustard, milk and egg together with a fork together, season with salt and pepper. Mix in chopped bacon and spread on the Lo-Dough to the edge and return to oven until set – apx 5-10 mins. If the topping spills over just spoon back on.
Once set remove from the oven and sprinkle grated cheese on top. Pop under the grill until golden brown
Serve with sliced beef tomatoes
